Works for Me Wednesday – Lunch

I always enjoy reading the submissions for WFMW at Shannon’s Blog. This week I want to share what works for me for our lunch time menu. Most of you know that we homeschool, we we eat lunch together at home a lot! For those of you who do not homeschool, you are probably in the middle of summer vacation. Are you tired of the same old sandwiches?
We have found that it works for us to cook more food for our evening meal, so we have left-overs for lunch the next day. We don’t always eat it as it was originally cooked. My boys will eat almost anything on a flour tortilla with a little salsa or cheese added to jazz it up!
We also have our summer garden starting to produce fresh veggies. It helps my food budget to add lots of fresh veggies as side dishes to our lunch offering.
